Founded in 2016 by Lee and Lynlee Kennedy, Leiper's Fork DIstillery - named after the town it is situated in - took advantage of changes to Tennessee spirit production regulations that had lasted for nearly 100 years to see up a small whiskey venture that would harken back to pre-Prohibition methods.

Using a swan-neck pot still - unlike more common column stills and doublers - the team also source local grains and use limestone-filtered water to bring out as much flavour as possible. At the moment all releases are bottled at 50%, one of the requirements to make the standards of the Bottled In Bond Act of 1897. The spirit also goes into barrel at a lower-than-usual strength of 55% ABV, which enables more sugars to be pulled out of the wood by water as opposed to alcohol.

A mashbill of 70% corn, 15% rye and 15% malted barley is used for the Tennessee Whiskey ( their Bourbon swaps out the Rye for Wheat) with the spirit undergoing the Lincoln County filtration process before aging for a minimum of 4 years in Virgin American Oak with #4 (ie high) char levels. Whereas the barley element in the Bourbon provides silky milk chocolate notes, the rye element in this adds more spice and oak notes on top of coffee and red fruits. Whereas the Bourbon is more of a sipper, this has a touch more bite that makes it superb in the likes of a Manhattan or partnering with foods.
