The Daftmill distillery and farm is based near Cupar in the Kingdom of Fife. One of the smallest distilleries in Scotland, it was founded by brothers Francis and Ian Cuthbert in their family farm, which grows potatoes, carrots, brocolli and malting barley along with rearing cattle. All the work to convert old mill buildings into a distillery – with the exception of the stills from Rothes – was completed by people living within a five mile radius.

From an initial idea in 2003, a distilling license was granted on St Andrews Day in 2005 and distilling commenced on 16th December that year. All barley used to distil is grown on the farm, and distilling takes place in two batches on a seasonal basis around spaces in the farming calendar during winter and summer.

Only 20,000 litres of spirit is produced each year - the inaugural bottling was released in 2018 as a 2005 vintage 12yo.

The third 'Fife Strength' 15yo release is also only the second (outwith the Summer 2009 release) to use ex-Pedro Ximenez Sherry casks in some form. 20 casks filled with spirit distilled during Summer 2008 were married together for this batch - 19 of which were ex-Bourbon barrels and a single ex-PX cask.
