    When ex-Sherry casks are used to mature whisky around the world, normally those casks are broken down into individual staves for ease of transportation - you can get a lot more staves on a truck than you can fully constructed casks. But The English Whisky Company in Norfolk get a number of those Sherry casks delivered with them already full of Pedro Ximenez, a lusciously dark, rich and sweet Sherry. A little of the English Whisky spirit is added to that Sherry before being allowed to marry for a few weeks, boosting the alcohol content and turning it into something which is a fantastic alternative to a Port - given it's undergone pretty much the same thing, with the addition of a spirit.

    It's pure Christmas in a glass, but to be honest it's utterly fantastic throughout the year, especially when drizzled over good quality ice cream in summer, on in an Affogato. It's also AMAZING in an XOXO, a cocktail featuring Cognac, Norfolk PX, a dark chocolate liqueur such as Mozart and an orange liqueur such as Cardenal Mendoza, resulting in what is in essence a liquid form of a Terry's Dark Chocolate Orange!
