    When ex-Sherry casks are used to mature whisky around the world, normally those casks are broken down into individual staves for ease of transportation - you can get a lot more staves on a truck than you can fully constructed casks. But The English Whisky Company in Norfolk get a number of those Sherry casks delivered with them already full of Pedro Ximenez, a lusciously dark, rich and sweet Sherry. A little of the English Whisky spirit is added to that Sherry before being allowed to marry for a few weeks, boosting the alcohol content and turning it into something which is a fantastic alternative to a Port - given it's undergone pretty much the same thing, with the addition of a spirit.

    I thought the original Norfolk PX was the epitome of Christmas, but this new Ginger version is even more festive,

    The ginger element is quite spicy, adding a new dimension to the unctuous concentrated dark fruit waves of decadence - this is a must-have for the festive season!
