The town of Zacapa can be found 200km West of Guatemala City - it reached it's centenary in 1976, the same year in which local doctor Alejandro Burgaleta launched the first bottle of Ron - the South American name for Rum.
The sugar cane used to produce the rum is sourced from the Western part of Guatemala, where it is more hot and himud. It's also harvested by hand, which allows for more care in terms of ripe cane. Indeed, Zacapa even developed a special hybrid machete to help with the harvesting.
The rum is neither agricole (fresh cane juice) nor molasses – instead it is made from sugar cane ‘honey’ – juice is pressed once then condensed by filtering and boiling off the water. The honey can then be stored for up to a year which means distillation is available all year round.
Casks of Ron Zacapa are trucked up a mountain to a warehouse where the air is cooler and temperatures more stable – it's known as ‘The House Above The Clouds’ and is nearly 8,000ft above sea level.
Lorena Vasquez is the Master Distillery. Born in Nicaragua, she studied chemistry and moved into food technology. Her first job was with a brewery, but she didn’t like beer, so moved on and ended up at Zacapa by the time she was 28.
