    Founded in 2016 by Lee and Lynlee Kennedy, Leiper's Fork DIstillery - named after the town it is situated in - took advantage of changes to Tennessee spirit production regulations that had lasted for nearly 100 years to see up a small whiskey venture that would harken back to pre-Prohibition methods.

    Using a swan-neck pot still - unlike more common column stills and doublers - the team also source local grains and use limestone-filtered water to bring out as much flavour as possible. At the moment all releases are bottled at 50%, one of the requirements to make the standards of the Bottled In Bond Act of 1897. The spirit also goes into barrel at a lower-than-usual strength of 55% ABV, which enables more sugars to be pulled out of the wood by water as opposed to alcohol.

    A mashbill of 70% corn, 15% wheat and 15% malted barley is used for the Bourbon, aged for a minimum of 4 years in Virgin American Oak with #4 (ie high) char levels. The higher proportion of barley provides a rich chocolate-y note that adds to a thick mouthfeel, along with hints of black cherry, praline and sweet nutmeg. It's a superb whiskey with a huge amount of complexity that demands to be savoured.
