    Located just outside Bridlington on the East Coast of England, the Twisted Roots Distillery is the only producer of rum in East Yorkshire, and also one of the very few in the entire country actually making rum from scratch, as opposed to buying in spirit from the Caribbean.

    Piers Moat founded the small distillery in 2016 and uses dehydrated sugar cane juice from Mauritius along with extremely long fermentation periods with Champagne yeast. The pot still also runs for around 18 hours at a lower temperature, meaning dilution with water is minimal and flavour complexity is maximised.

    The Botanical Rum was until a recent rebranding called 'Rosé Rum', due to the slightly pink-y colour resulting from a brief aging period in French red wine barrels. Local botancials of gorse and violet are added as well through a concentrate produced by Pier's wife Taeg, and the end result is a most unusual rum unlike anything I've come across before. There's a lovely floral sweetness, which is clearly an influence from the wine casks - hints of strawberry and honeysuckle. But then an edgier note arrives on the finish, closer to dried raspberries.

    It's actually a great alternative to a gin - try this with tonic and a slice of lime and you've got an utterly refreshing highball!
